Healthier Choice Blueberry Muffin




WHOLE WHEAT BLUEBERRY MUFFINS

1 egg

1/2 c. milk

1/4 c. vegetable oil

1 1/2 c. whole wheat flour

1/2 c. honey

2 tsp. baking powder

1/2 tsp. salt

1 c. blueberries


Heat oven to 400 degrees. Line muffin tin and muffin cups. Beat egg; stir in milk and oil. Mix in remaining ingredients except blueberries just until flour is moistened. Batter should be lumpy. Fill muffin cups 2/3 full and bake about 20 minutes or until golden brown. Makes 12 muffins.

Iron Cupcake Challange



Its official...I am fully a registered contestant to compete in the "Iron Cupcake Challenge", in London Ontario. Very excited.


What is it?

Iron Cupcake is open to bakers to compete in a competition similar concept as the T.V show Iron Chef. A secret ingredient is announce and each competitor has to incorporate it into their Cupcakes somehow.

I will be judged 1\3 presentation , 1\3 taste, 1\3 on creativity on how the "secret ingredient" is Incorporated. Prizes are to be won.



Iron cupcake gives back:


Every month a new non-profitable organization is chosen to share the money raised from each event. For the month of july...Iron Cupcake is going to give back to http://www.fairygodmotherproject.com/





The secret ingredient was just announce to me today....


FLOWERS....edible flowers. This should be interesting.


I have a Idea already, but can't tell yet. Dont want to share my idea incase another competitor reads my blog. Wish me luck!

SkaterGirl Cupcakes

Skater Girl cupcakes were designed for a birthday party to celebrate a girl's 11Th birthday.
I had strict requests from her:

1. They HAVE to be black, red, white & pink
2. There has to be black & white checkers
3. To include the weird skull creature like in the picture above
4. Skateboards are a must!
5. And lots of flowers.

So with all that information, I came up with these:





The skateboards were made of fondant, the wheels were made of mini black gummy's, and the details were all drawn on with a black food color writer pens.





This skateboard is a gift to the birthday girl from her mom. I think the cupcakes match the theme pretty well.




Gifts For Dads

My girls needed to give something to their Dad for Fathers day. We thought long & Hard.....

Well he has a serious sweet tooth.....

& he Loves Chocolate....

Then I asked my Daughter..."what else does daddy like?"

She said "he likes work."

He has been working a lot lately and we haven't seen much of him, so I guess she assumes he likes work. The mind of a 2 year old. Then I thought about it...and he really does like work. He loves what he does. Actually he is almost married to his work. Its okay ...it is the one affair he can have that I'm okay with. Ha!



So..we put two + two together...
I'm sure a lot of you know where I'm going with this.

Here is a clue....





YES...he is a Carpenter!


So Carpentry + Chocolate...and we came up with...



These handyman tools are going to be the cupcake toppers.


Don't You Love it?!






I don't think there would have been anything more fitting for their dad than little mini Fondant edible hammer, saw, tool belt , and a wrench.(I don't think a wrench is a carpentry tool..oops!)



He also told me the other day that his tool belt broke. We thought that maybe we could replace his broken one with a new one but I wouldn't even know where to start looking for the right tool belt.

So this is the best I can do....

With all said & done....we packaged up the cupcakes in a new cooler, with a gift card to the movies. (Toys Story 3-- for a date with him and our daughter)

Graduation 2010







Fondant Graduation caps

these were ordered from a customer, who's friend had just graduated Bsc..Computer Sciences at Western University in London, Ontario, Canada. The Icing is "Actually" a deep royal purple...Time to get a new camera (they look blue) :(....

Anyways in real life I'm sure they will be very happy with them. The purple Icing was requested to Symbolize the school colors of the University.






All 18 are made of double chocolate cupcakes, and vanilla butter cream frosting. all the decorations are made of Fondant except for the little diplomas. They are paper rolled up with some "Congratulations", "You did it", "BSc class of 2010".... and special words written on the inside.

Rainbow Daisy Cupcakes






French Vanilla Frosted Rainbow & Chocolate Cake cupcakes.






These Cupcakes too were for our church's bake sale. All the funds are going to go towards fundraising for "World Youth Day" at St Michael's Parish, In London, Ont.


I got these cupcake papers & daisies from the "Martha Stewart Collection". They have been sitting in my cupboard for a while waiting to be made for the perfect event. Then this spring Yard Sale at our church came up and I think it is pretty appropriate for this time of year. See those polka dots???



Yes! I love polka dots. This is what Sold me on buying these paper cups...


But....



With much disappointment....
They DID NOT SHOW UP!!! err Sorry Martha!


I love Ya but I'm not happy with your paper cups.

Any who....
I was going to do plain French Vanilla cupcakes.(this is the batter before they hit the oven)..but I thought that was kinda boring, so I thought Id add a splash of color-with Wilton gel color (rose pink, sky blue, and yellow butter cream)...It really changed the whole look of what I had planned for the cupcakes...
so much for boring white...I think I could find this my new favorite thing so fun!



These were super Colorful & really yummy.
I know that at the sale probably 90% of the people are probably guilty "Chocolate Lovers"like me...So I couldn't be a part of a bake sale with no Chocolate....

So I gave in.

I whipped up Another batch of Double Chocolate Cupcakes. I wonder which will sell faster? The rainbow bright cupcakes or Chocolate?
Or maybe no one will buy them at all?
who am I kidding...they will be gone.......right?!

"I hope."
